INGREDIENTS

4  green apples

5 fresh dates

1/2 cup almonds

1 small nub of ginger

1/2 cup coconut flour

1/4 cup lemon juice

1/2 teaspoon baking soda

1/2 cup coconut oil

METHOD

Preheat oven on 150 degrees Celsius (fan forced) or 180 degrees for non fan electric).  Quarter apples and remove stalk and core.  Place in food processor.  Slice open and remove seek from dates and place into food processor with apples.  Peel ginger and chop  roughly.  Put chopped ginger in food processor.  Add almonds and pulse  apple, date, almond and ginger to chop medium small.  Add coconut flour, coconut oil, baking soda and lemon.  Pulse to blend through the mix.  Spray cup cake tray with coconut oil and dust with coconut flour.  Fill each cup cake hole with mixture and place in oven.  Cook until toasted well on top.  Cook in the pan and when cooled spoon out into an airtight container.  Store in the fridge and eat as a Granola Brekkie  or a snack.
