INGREDIENTS

400 grams ground beef

1 nub of turmeric diced

2 white onions

3 Asian eggplants

1/2 cup almond meal

3 teaspoons cumin

3 cloves garlic (diced)

1/4 cup coriander

salt and pepper

1 tablespoon coconut oil

3 eggs

METHOD

​Place turmeric, onions, eggplants, sweet potato, almond meal, coriander, cumin, salt and pepper.  Blend  until all is is finely chopped.  Add eggs and mince pulse blending until well combined.  Heat coconut oil in a frying pan.  Shape patties and place in hot oil cooking both sides until well browned.  Place patties on an oven dish and finish cooking in a 200 degree celsius oven.  I cook in batches and continue adding to oven dish until all mixture has been cooked.  Serve with a crisp salad or try them wrapped in a lettuce leaf with tomato, avocado salsa and beetroot. Delicious
