VEGETABLE SALAD

INGREDIENTS

1 Punnet of Quartered Cherry Tomato (vary colors based on availability)

1 Lebanese Cucumber (diced)

1 Red Onion (diced finely)

2 Carrots (diced)

2 Shallots (finely chopped)

1/4 Cup chopped Coriander

1 Avocado (diced)

1 teaspoon of Sesame Oil

1 teaspoon of Olive Oil

1 Lemon (squeezed)

METHOD

Place all ingredients in a large bowl.  Add oils, salt and pepper to taste and squeeze lemon over.  Stir through and serve.
