INGREDIENTS

200 grams Swiss Brown Mushrooms

2 Shallots (chopped)

2 pieces of overcooked chicken drumsticks (cold from fridge) and chopped

1 tablespoon of chilli eggplant salsa

1 teaspoon ground porcini mushroom (available from Mrs Flannery's)

Salt & Pepper

1/4 cup of chopped coriander

1 teaspoon coconut oil

METHOD

Heat coconut oil in a large frying pan.  Add mushrooms and 1/2 coriander to the pan and fry until mushrooms brown.  Add 1/2 shallots, porcini mushroom, and chicken.  Stir through and salt and pepper to taste.  Then add chilli eggplant salsa and combine well with ingredients frying.  Cook for 3 minutes and them add remaining coriander and shallots and serve.  Will serve 2 people.
