TURKEY VEGETABLE OYONOMIYAKI PANCAKE

 

Ingredients

1 1/2 cups almond flour 

1/2 cup coconut
2 eggs
1 tbs coconut vinegar
1 desert spoon chia seeds
1 cup chicken stock
Finely chop - 1 celery stick, 1 yellow capsicum, 1/2 onion, 3 green shallots, 2 garlic cloves
100 grams turkey breast (minced in food processor)
Salt and pepper
1 tsp sesame oil
1 tbls olive oil

1 tbls coconut oil
1 tsp baking soda (optional, if using - gluten free)

Method

Place flours and baking soda in food processor and mix
Add eggs and mix, then slowly pour in stock and coconut vinegar
Place diced vegetables in a large bowl and pour batter into bowl
Fry turkey in pan with a little oil until brown, then spread evenly on plate and cool in freezer for 5 mins
Stir into batter mix
Heat oils in a large pan
Spoon mixture into heated pan and spread around into a large pancake
Cook until golden brown and then turn and do same for other side
