INGREDIENTS

1/2 cup coconut flour

1 tsp himalayan salt

1 tsp salt

5 eggs

1/2 cup coconut oil

1 vanilla pod seeds

1 cup currents

1/2 cup cashews

 

METHOD

Combine coconut flour, salt and baking soda in a bowl.

In a food processor, blend eggs, coconut oil, agave and vanilla.

Add dry ingredients and pulse blend until well combined.

In a well greased loaf pan, pour the batter.

Bake at 180 degrees celsius for approximately 50 minutes.

Cook on a wire rack and store in an airtight container.
