INGREDIENTS

2 Nashi Pears (sliced)

200 grams of Rocket (baby rocket is best)

1 Orange (squeezed)

1/2 cup of crushed almonds

1/4 cup of shredded coconut

Salt and Pepper

Coconut Spray

1 Shallot onion (finely diced)

METHOD

In a large bowl place nashi pears, shallot onions, and shredded coconut.  Salt and Pepper to task.  Add rocket and work pears and juice dressing through the leaves.  Arrange on serving dish and sprinkle with crushed almonds.  Serves 3-4 people
