Protein Packed Zucchini Muffin Bites

INGREDIENTS

5 free run or omega-3 eggs
1/2 Cup  coconut milk
6 tbsp coconut flour
1/8 tsp cardamon
1/4 tsp salt

3 tbsp water
1 Zucchini (grated)

1/2 Onion (grated)

 

 

METHOD

Preheat Oven at 200 degrees Celsius.

In a food processor, mix the eggs with the coconut milk.

In a separate bowl, mix the coconut flour with the spices and salt.

Add the dry ingredients to the wet and blend.
Add water one tablespoon at a time until a thick batter consistency is reached.

Stir Onion and Zucchini through the batter.
Drop spoonfuls of the batter into each muffin tray hole (using a 24 hole muffin tray).

Cook until golden on top, approximately 15-20 minutes.  Gentle twist and lift each muffin out of muffin tray and place on baking rack to cool.  Great as a snack, or serve with salad for a healthy protein packed lunch.
