INGREDIENTS

1/2 avocado (diced)

1/4 cup diced yOni's Paleo Pantry Overcook Chicken Drumsticks

8 Toasted Cashews

1 teaspoon yOni's Paleo Pantry Lemon Mustard Dressing

1 slice yOni's Paleo Pantry Pumpkin Bread

Sprig of Italian parsley

Salt and Pepper

METHOD

Halve a small avocado slice in skin and hash cross with small knife.  Scoop avocado flesh with a spoon into a small bowl.  Add diced chicken and almonds to the bowl.  Add a teaspoon of yOni's Paleo Pantry Lemon Mustard Dressing and mix ingredients together with a plastic spoon (metal spoons can make the Lemon Mustard Dressing bitter).

Under a hot grill place one slice of yOni's Paleo Pantry Pumpkin Bread and toast both sides.  Remove from grill when toasted both sides and chop into cubed croutons.  Toss croutons into bowl with avocado salsa and garnish with spring of Italian parsley.  Portion size serves one for breakfast.  Adjust measurements to suit number of portions needed.
