ROAST PUMPKIN AND SPINACH SALAD

INGREDIENTS

1 Butternut Pumpkin (diced)

3 Cups of English Spinach

1/2 Cup of Craisin's

Salt & Pepper

1 teaspoon of Cumin

1 desert spoon Olive Oil

1/2 Red Onion (finely sliced)

1 Garlic Clove (crushed)

 

METHOD

Place Olive Oil in a large baking dish with garlic clove, cumin, salt and pepper.  Add pumpkin and rub with oil and seasoning.  Add a sprig of rosemary and bake in a 200 degree Celsius oven until pumpkin is golden and softened.  Remove pumpkin from oven and cool on paper towels.  In a large bowl place the spinach, craisin's and pumpkin.  Splash olive oil over salad and toss.  Serve as a main meal or a side with meat dishes.
